Recipe: Eggplant and Spinach (gluten free) Pizza

After taking the top picture I decided to add spinach to the mix. ;) See, wing it as you go! Use what's in your fridge.
Photobucket Follow instructions on package to make crust.
While dough is rising and baking the first time without toppings on it, slice up your eggplant and lightly brown on both sides in pan. I used coconut oil and cooked about 3 minutes on each side.
Slice up eggplant into cubes.
Wash and chop fresh spinach.
Chop up garlic and use as much to taste.
When crust is ready place sauce, toppings, garlic, and cheese on pizza.
Bake for 9-14 minutes.

I got both my kids to eat this! I've never cooked with eggplant before so I was very pleased. Happy cooking, hope I have inspired you to try something new. ;)
